Our Story

Born on a Mountain, Roasted in El Dorado Springs

Hillbilly Coffee Roasters didn't start in a corporate warehouse. It started with a simple conviction: coffee should taste like something you can believe in. That conviction brought us to El Dorado Springs, right here in the Missouri Ozarks — a place where slow mornings and strong coffee go hand in hand.

We source green beans from farms that treat their land and their people right. We roast in small batches so every bag you open hits the same sweet spot we tasted on the day it left our drum. No shortcuts. No blends designed to hide mediocrity. Just honest, carefully roasted coffee from people who actually give a damn.

We control every step — because that's the only way to guarantee what ends up in your mug.

Green Bean Selection

We hand-pick green beans from farms that practice sustainable agriculture and treat their workers fairly. If we wouldn't drink it, we won't buy it.

Small-Batch Roasting

Every lot is roasted in quantities small enough to monitor closely. We taste at every stage — development, first crack, cooling — until it's exactly right.

Packaged Fresh

We bag within 24 hours of roasting using one-way valve packages that lock in freshness. Your coffee arrives at peak flavor — not weeks later.

Ready for You

Pick it up at our roastery, or we ship it straight to your door. Either way, it's coffee roasted with intention and delivered with care.
